Mutator Doppelbock is a rich, malt-forward gluten-free lager inspired by the legendary strong Bavarian Doppelbocks. Shared with permission by Mutantis Brewery & Bottle Shop, this recipe layers Munich and pale millet malts with specialty rice malts to create deep notes of toasted bread, caramel, and dark fruit. Traditional Mt. Hood and Czech Saaz hops provide gentle bitterness while allowing the rich malt profile to shine, resulting in a smooth, warming lager with exceptional depth and complexity.

- 0.90 oz Mt. Hood Hops (90 min)
- 1.10 oz Czech Saaz Hops (20 min)

Yeast
- 1 package Fermentis SafLager W-34/70
Yeast Nutrient
Use yeast nutrients according to the manufacturer's dosage and timing recommendations.
Brewing Instructions
Refer to our all-grain brewing tutorials for mash and boil procedures. Ferment at 60°F for 5 days, raise to 68°F for 5 days for a diacetyl rest, then lager at 45°F for 11 days followed by 40°F for 21 days. Follow the yeast manufacturer's recommendations for fermentation and temperature control.
