A Little Millet In My Wine is a bold, high-gravity gluten-free specialty ale inspired by the rich complexity of American Barleywine. Built on a generous grain bill of millet and rice malts, this all-grain recipe layers intense malt character with assertive American hop flavor and aroma. First wort hopping provides a smooth bitterness, while whirlpool and dry hop additions of Cascade, Centennial, and Chinook create vibrant citrus, pine, and resinous notes. Designed for experienced homebrewers, this robust recipe rewards patience with exceptional depth, balance, and aging potential.
