Description:
German-style Dunkelweizen beer made with amaranth and millet.
Ingredients:
- 1/2 lb of Amaranth (mash/sparge)
- 1 lb of Dark Roasted Millet Malt (mash/sparge)
- 3 lbs Tapioca Syrup (prior to boil)
- 3 lbs Brown Rice Syrup (prior to boil)
- 8 oz Molasses (prior to boil)
- 8 oz Maltodextrine (prior to boil)
- 1.25 oz Tettnang Hops (60 min)
- 0.5 oz Tettnang Hops (15 min)
- 1 oz Hallertau Hops (flameout)
- 1 lb D90 Syrup (flameout)
- 1 lb D180 Syrup (flameout)
- 1 pkg Wheat Yeast

Procedure:
1/2 lb of Amaranth soaked and then boiled for 30 minutes.
1 lb of dark toasted millet; both steeped in water at 145 for 45 minutes, strained out, sparged and then bring to boil.
And primary fermentable sugars, return to boil and achieve hot break.
Add hops and remaining fermentable sugars according to schedule.
Chill wort until appropriate temperature to pitch yeast.
