Description:

A rich, malt-forward gluten-free red ale brewed from malted buckwheat delivering a full-bodied beer. Caramel 50L, Caramel 120L and Red Wing millet malts delivers amber color layered with caramel flavor with rich dark color. Carefully selected roast levels provide complexity and body while maintaining smooth drinkability. Northern Brewer hops add balanced bitterness with subtle herbal notes, allowing the mild nutty buckwheat character to remain front and center. This all-grain recipe highlights the versatility of gluten-free malts, producing a full-flavored amber ale that stands shoulder-to-shoulder with traditional barley-based versions—perfect for brewers seeking depth and balance.

Ingredients:

  • 14 lbs Pale Buckwheat Malt
  • 2 lbs Caramel 50L Millet Malt
  • 8 oz Red Wing Millet Malt
  • 8 oz Pitch Rice Malt
  • 2.5 oz Northern Brewer Hops
  • 1 pkg Safale S-04 Dry Yeast

Primary Ferment: 21 days at 68 - 70 degrees

Procedure:

● Enzyme Note: Ceremix® Flex and Ondea Pro can replace the listed enzymes; in a rising step mash they increase mash efficiency and may alter target beer parameters ●

Perform a Single Infusion Mash at 163.4F for 60-90 minutes; or Step Mash at 155-165F for 45-60 minutes followed by 140-150F for 45-60 minutes with Termamyl SC DS and SEBAmyl L enzymes per dosing instructions and in order of optimal temperature recommendations.

Bring to boil and achieve hot break. Maintain rolling boil.
