Description:

American Standard Lager is a refreshing gluten-free lager brewed with a mix of millet, rice, and corn malts to achieve a clean, crisp flavor profile typical of American-style light lagers. Light brown sugar and honey contribute subtle sweetness and fermentable sugars, while Tettnang hops provide gentle bitterness and aroma. Clarified with Irish Moss and fermented with SafLager S-23 yeast, this beer offers a smooth, drinkable, and fully gluten-free alternative to traditional lagers—perfect for those seeking a classic lager experience without gluten.

  • 1 lb Flaked Corn

  • 1 oz Tettnang Hops

  • 1 pkg SafLager S-23 Yeast

Additional Instructions

Primary Ferment: 14 days at 46-58 degrees
Secondary Ferment: 14 days at 32-40 degrees

Procedure:

● Enzyme Note: Ceremix® Flex and Ondea Pro can replace the listed enzymes; in a rising step mash they increase mash efficiency and may alter target beer parameters ●

Perform a Single Infusion Mash at 163.4F for 60-90 minutes; or Step Mash at 155-165F for 45-60 minutes followed by 140-150F for 45-60 minutes with Termamyl SC DS and SEBAmyl L enzymes per dosing instructions and in order of optimal temperature recommendations.

Bring to boil and achieve hot break. Maintain rolling boil.

1 oz Tettnang Hops (90 min)
1 tsp Irish Moss (15 min)
1 lb Light Brown Sugar (1 min; careful not to scorch)
1.5 lb Honey (1 min; careful not to scorch)

1 pkg SafLager S-23 Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
