Description:

This gluten-free orange pale ale showcases how sorghum and rice syrups can deliver a bright, balanced, and refreshing beer. Sweet orange peel and cracked coriander provide classic citrus and spice notes that complement the clean bitterness and aroma of Cascade hops, while maltodextrin adds body and head retention often missing in gluten-free beers. Finished with a dry hop addition for extra hop aroma, this recipe produces a crisp, aromatic, and flavorful pale ale that highlights the creativity and potential of brewing great-tasting gluten-free beer at home.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 6 lbs White Sorghum Syrup
  • 1.33 lbs Brown Rice Syrup
  • Hop Bill Summary ---------------------------------------
  • 4 oz Cascade Hops
  • Other Ingredients ---------------------------------------
  • 2 oz Sweet Orange Peel
  • 1 oz Coriander Seed
  • 8 oz Maltodextrin
  • 1 pkg S-04 Yeast

Additional Instructions

Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum and rice syrup and table sugar (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1.5 oz Cascade Hops (60 min)
2 oz Sweet Orange Peel (10 min)
1 oz Coriander Seed (5 min)
8 oz Malto Dextrine (5 min)
1.5 oz Cascade Hops (2 min)

1 pkg S-04 Yeast

Dry Hopping:
1 oz Cascade Hops

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
