Blonde Annie’s is a bright, easy-drinking gluten-free pale ale that highlights how simple ingredient choices can produce a clean, flavorful beer. Roasted gluten-free pale oat malt provide a soft, lightly toasted backbone, while layered honey additions build fermentability, subtle floral sweetness, and a smooth finish. Sorghum syrup supplies the primary fermentable base, keeping the beer light and approachable, and classic Cascade hops deliver fresh citrus and floral character, enhanced by a late Amarillo dry hop for added aroma. This recipe is ideal for gluten-free brewers seeking a refreshing, hop-accented pale ale with balance, drinkability, and craft complexity.

Ingredients:

  • Grain Bill ---------------------------------------
  • 2 cups Pale Oat Malt (recommended: roast at 350F for 30 min)
  • Fermentable Bill ---------------------------------------
  • 6 lbs Light Sorghum
  • 2 lbs Honey
  • Hop Bill Summary ---------------------------------------
  • 2 oz Cascade Hops
  • 0.5 oz Amarillo Hops
  • Other Ingredients ---------------------------------------
  • 1 cup Maltodextrin
  • 1 pkg Safale US-05 dry yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break.

1 cup Maltodextrin (60 min)
1 oz Cascade Hops (60 min)
1.5 lbs Honey (45 min; careful not to scorch)
0.75 lbs Honey (15 min; careful not to scorch)
1 oz Cascade Hops (2 min)

1 pkg Safale US-05 dry yeast

Dry Hopping:
0.5 oz Amarillo Hops

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
