Description:

This gluten-free Spiced Ale is brewed on a clean sorghum and rice extract base, allowing warm pumpkin spices to take center stage. Cascade hops provide a smooth, balanced bitterness, while a late addition of Fuggles contributes subtle earthy notes that complement the spice profile. The pumpkin spice added at bottling/kegging delivers classic autumn flavors of cinnamon, nutmeg, and clove, creating a smooth, aromatic finish. Designed specifically for gluten-free brewers, this recipe produces a flavorful, approachable spiced ale that is perfect for seasonal drinking and holiday gatherings.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 6 lbs Sorghum Liquid Malt Extract
  • 1.4 lbs Rice Extract Syrup
  • Hop Bill Summary ---------------------------------------
  • 1 oz Cascade Hops
  • 1 oz Fuggles Hops
  • Other Ingredients ---------------------------------------
  • 1 tsp Irish Moss (15 min)
  • 1 pkg US-05 Yeast
  • 1 tbsp Pumpkin Spice

Additional Instructions

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Cascade Hops (60 min)
1 tsp Irish Moss (15 min)
1 oz Fuggles Hops (5 min)

1 pkg US-05 Yeast

Bottling/Kegging:
1 tbsp Pumpkin Spice added to beer at bottling/kegging.

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHS or grocery store.
