Simple Simon Sorghum Beer is a straightforward, beginner-friendly gluten-free extract ale designed to showcase the clean, mild character of sorghum without complex techniques or specialty ingredients. Built on a single fermentable base of white sorghum syrup, this recipe delivers a light, crisp body with subtle sweetness, balanced by classic Tettnang hops for gentle bitterness and soft herbal notes. A small addition of honey at flameout adds fermentability and a delicate floral lift while keeping the finish dry and refreshing. Modeled after easy-drinking commercial gluten-free ales like Redbridge, this recipe is ideal for new gluten-free brewers or anyone looking for a simple, dependable, and approachable gluten-free beer.

Ingredients:

  • 6 lbs 11 oz BriesSweet White Sorghum Syrup
  • 1.5 oz Tettnang Hops
  • 0.5 lb Honey
  • 1 Whirlfloc Tablet
  • 1 pkg Lallemand Nottingham Yeast

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1.5 oz Tettnang Hops (60 min)
1 Whirlfloc Tablet (10 min)
0.50 lbs honey (flameout)

1 pkg Lallemand Nottingham Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHS or grocery store.
