Description:

Oz Pale Ale is a crisp and refreshing gluten-free pale ale brewed entirely from sorghum extract, highlighting the classic aroma and flavor of Cluster hops. A carefully timed hop schedule—including additions at 60 minutes, 15 minutes, and flameout—creates a balanced bitterness and subtle citrusy notes, while Whirlfloc ensures clarity. Fermented with Safale US-05 dry yeast, this ale has a clean finish and a smooth, approachable body, making it a perfect all-occasion gluten-free beer.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 6 lbs Liquid Sorghum Extract
  • Hop Bill Summary ---------------------------------------
  • 1 oz Cluster Hops
  • Other Ingredients ---------------------------------------
  • 1 Whirfloc Tablet
  • 1 pkg Safale US-05 Yeast
  • Yeast Nutrient

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add 2 lbs sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

0.25 oz Cluster Hops (15 min)
1 Whirfloc Tablet (15 min)
0.25 oz Cluster Hops (flameout)
4 lbs Liquid Sorghum Extract (flameout)

1 pkg Safale US-05 Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
