Description:

Mild Ale is a smooth, gluten-free ale crafted with sorghum syrup, candi sugar, molasses, agave syrup, and finished with honey for a rich, slightly sweet character. Perle, Hallertau, and Kent Goldings hops provide gentle bitterness and subtle floral notes, while Safale S-04 yeast delivers a clean, balanced fermentation. This approachable ale shows how classic mild flavors can be recreated entirely gluten-free.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 3 lbs Briess White Sorghum Syrup
  • 5 oz Dark Belgian Candi Sugar
  • 4 oz Molasses
  • 3 oz Avage Syrup
  • 12 oz Honey
  • Hop Bill Summary ---------------------------------------
  • 1 oz Perle Hops
  • 0.50 Hallertau Hops
  • 0.50 Kent Golding
  • Other Ingredients ---------------------------------------
  • 1 tsp Irish Moss
  • 1 pkg Safale S-04 Yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add all fermentables except honey (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

0.75 oz Perle Hops (60 min)
1 tsp Irish Moss (15 min)
0.50 Hallertau Hops (1 min)
0.25 Perle Hops (1 min)
0.50 Kent Golding (1 min)
12 oz Honey (flameout; careful not to scorch)

1 pkg Safale S-04 Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
