Description:

Lancaster Dark Ale is a gluten-free American amber ale featuring sorghum syrup, cane sugar, and molasses for rich caramel and toffee notes. Northern Brewer and Cascade hops provide balanced bitterness and subtle aroma, while maltodextrin enhances body and mouthfeel. Fermented with Windsor or Nottingham yeast, it’s a smooth, full-bodied ale crafted entirely gluten-free.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 7 lbs Sorghum Syrup
  • 1 lb Cane Sugar
  • 2 lbs Molasses
  • Hop Bill Summary ---------------------------------------
  • 1 oz Northern Brewer Hops
  • 0.5 oz Cascade Hops
  • Other Ingredients ---------------------------------------
  • 6 oz Maltodextrin
  • 1 pkg Windsor or Nottingham Ale Yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup, cane sugar and molasses (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Northern Brewer Hops (60 min)
6 oz Malto-dextrin (15 min)
0.5 oz Cascade Hops (10 min)

1 pkg Windsor or Nottingham Ale Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
