Ingredients:

  • Redwing Millet Malt 1 lb 10 oz
  • Caramel Millet Malt 1 lb 10 oz
  • Pale Millet Malt 1 lb 10 oz
  • Crystal Rice Malt 1 lb 10 oz
  • Biscuit Rice Malt 3 lb 6 oz
  • Palisade Hops 0.96 oz
  • Yeastex 61 Nutrient 2 grams
  • Irish Moss 1/4 tsp
  • Fermentis S-04

Additional Instructions

Primary Ferment: 68F for 7 days
Secondary Ferment: 68F for 7 days

Procedure:

PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.

MASH INSTRUCTIONS:
Perform rising step mash - 1st rest 125F @ 15 minutes; 2nd rest 145F @ 45 minutes; 3rd/final rest 175F @ 30 minutes. All enzymes added at start of mash; Ceremix Flex, Ondea Pro, and Termamyl 9.8 ml.

SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.

BOIL INSTRUCTIONS:
Palisade Hops 0.96 oz 45 min
Yeastex 61 Nutrient 2 grams 10 min
Irish Moss 1/4 tsp 10 min
Yeast: Fermentis S-04
