  • 20.3% Flaked Quinoa
  • 10.5% Red Wing Millet Malt
  • 6.5% Griffin Millet Malt

  • 0.6 oz Ella (substitutes: Cascade, Citra and Galaxy) (14.8% AA) - 8.7 IBU
  • 0.6 oz Galena (12.5% AA) - 13.9 IBU
  • Safeale US-05
  • Fermaid-O Yeast Nutrient

Primary Ferment: 12 days

Procedure:

PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.

MASH INSTRUCTIONS:
Perform rising step mash using 6.75 - 7.25 ml Ceremix-Flex enzyme:
Dough In - 5 min 125°F
First Hold - 20 min 125°F
Rise - 60 min 175°F
Second hold - 45 min 175°F

SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.

BOIL INSTRUCTIONS:
0.25 oz Ella (substitutes: Cascade, Citra and Galaxy) 7.7 IBU - 30 min
0.25 oz Galena 6.5 IBU - 30 min
0.35 oz Ella (substitutes: Cascade, Citra and Galaxy) 8.7 IBU - 15 min
0.35 oz Galena 7.4 IBU - 15 min
1 Whirlfloc Tablet - 10 min

YEAST:
Safeale US-05

FERMENTATION:
Fermaid-O Yeast Nutrient on day 2

Total Fermentation Time: 12 days + 2 days cold crash
