PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.
MASH INSTRUCTIONS:
Perform rising step mash using 6.5 - 7 ml Ceremix-Flex enzyme:
Dough In - 5 min 125°F
First Hold - 20 min 125°F
Rise - 60 min 175°F
Second hold - 45 min 175°F
SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.
BOIL INSTRUCTIONS:
1.10 oz Hallertauer Mittelfrueh - 60 min
0.75 oz Northern Brewer - 30 min
1 Whirlfloc Tablet - 10 min
YEAST:
Saflager Lager
Total Fermentation Time: 7 Days of fermentation followed by a cold crash which lasted about 2
and a half months.
