Procedure:

Bring 4.99 gallons of water up to a strike temperature of 152*F. Mash in (plus water additions and enzymes) and rest at 145*F for 45 min. Raise mash temp to 165*F and rest for 60 min. Total mash time of 1 hr. 45 min.

Boil for 60 min. and whirlpool for 40 min. following the described hop schedule. Rack your wort to your fermenter of choice and pitch your yeast (I like to rehydrate mine) at 68*F. Ferment for 10-14 days. Don’t forget to dry hop**

**There are a variety of ways you can dry hop:
(1) Opening your fermenter at the desired time and quickly dumping in your dry hop additions, being the simplest.
(2) Alternatively, if you’re looking to reduce oxidation, you could fill two separate dry hop bags for your dry hop additions and tie a sous vide magnet in the bag. Carefully attach the dry hop bags to the interior of your fermenter (well above your wort) and use a second sous vide magnet on the exterior to hold it in place. At the desired time during fermentation, release the exterior magnet and watch the dry hop bag fall into your fermenting wort. Voila!
