Happoshu literally translates to "sparkling alcohol" and is a category of Japanese beer-like beverages defined by their lower malt content. This gluten-free recipe features grains including rice and millet malt that would be considered true to style. This brewing approach will help you craft delicious gluten-free beer at home.

Ingredients:
- Grain Bill
- 4.38 lb Biscuit 4L Rice Malt
- 1.75 lb Cara Millet Malt
- 1.75 lb Pale Millet Malt
- Optional:
- Substitute up to 0.75 lb Pale Millet Malt with Pale Oat Malt (approximately 9.5% of the grain bill)

- Use yeast nutrients according to the manufacturer's dosage and timing recommendations.

Primary Ferment: 62 deg F for 3 days, 54 deg F for 5 daysSecondary Ferment: 67 deg F for 3 days, 45 degrees F for 16 days
