- Goldfinch Millet Malt 2 lbs 6 oz
- Pale Millet Malt 2 lbs
- Biscuit Rice Malt 2 LBS
- Pale Rice Malt 2 lbs
- Amber Rice Malt 12 oz
- Caramel Millet Malt 8 oz
- Sorachi Ace Hops 0.28 oz (or Liberty Hops)
- Lemondrop Hops 0.56 oz
- Yeastex 61 Nutrient 2 grams
- Irish Moss 1/4 tsp
- Lemon Peel 0.32 oz
- Yeast: Fermentis US-05

Procedure:
PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.
MASH INSTRUCTIONS:
Perform rising step mash - 1st rest 125F @ 20 min; increase mash temp over 45 minutes to 175F, then rest for 60 minutes. All enzymes added at start of mash; Ceremix Flex 8 ml; Ondea Pro 12 ml; Termamyl 12 ml.
SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.
BOIL INSTRUCTIONS:
Sorachi Ace Hops 0.28 oz (or Liberty Hops) @ 90 min
Lemondrop Hops 0.56 oz @ 10 min
Yeastex 61 Nutrient 2 grams @ 10 min
Irish Moss 1/4 tsp @ 10 min
Lemon Peel 0.32 oz @ 5 min
