Description:

Enjoy brewing a flavorful gluten-free Irish Red Ale with this all-grain gluten-free recipe, featuring a malt bill of millet and buckwheat malts for balanced maltiness and hop character. Designed for gluten-free homebrewing using gluten-free malts and quality yeast, this recipe brings classic red ale flavors into a gluten-free beer you can be proud of.

Tasting Notes: Strong bready, toffee, biscuit notes from the malt. Slightly increasing the bitterness to between 30-40 IBUs works well to balance the prevalence of the malt.

Procedure:

PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.

MASH INSTRUCTIONS:
Rising Step Mash utilizing Ceremix and/or Ondea Pro: Hold at 125°F for twenty minutes, adding enzymes at mash in. Rise to 175° F and hold for 45 minutes then sparge as usual.

SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.

BOIL INSTRUCTIONS:
Azacca 60 minutes 6 IBU
El Dorado 60 minutes 6 IBU
Azacca 30 minutes 5 IBU
El Dorado 30 minutes 5 IBU
Azacca 15 minutes 9 IBU
El Dorado 15 minutes 9 IBU
Yeast: US-05
