Honey of a Gluten-Free Lager is a crisp, gluten-free American-style lager brewed with Sorghum Syrup and corn syrup, delivering a smooth, fermentable base. Enhanced with honey for a subtle sweetness, and balanced with Hallertau, Cascade, and Saaz hops, this lager is light, refreshing, and easy to drink—perfect for both gluten-free enthusiasts and friends who don’t usually reach for beer. Fermented with SafLager S-23 yeast, it offers a clean, honey-forward finish that’s both approachable and flavorful.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 3.75 lbs BriesSweet White Sorghum Syrup
  • 0.5 lbs Corn syrup
  • 1.5 lbs Honey
  • Hop Bill Summary ---------------------------------------
  • 0.5 oz Hallertau Hops
  • 0.75 oz Cascade Hops
  • 0.75 oz Saaz Hops
  • Other Ingredients ---------------------------------------
  • 1 pkg SafLager S-23 Yeast

Additional Instructions

Primary Ferment: 2.5 weeks at 55 - 60 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum and corn syrup (this prevents scorching the syrup), return to boil allow to achieve hot break.

0.5 oz Hallertau Hops (50 min)
0.75 oz Cascade Hops (10 min)
0.75 oz Saaz Hops (flameout)
1.5 lbs Honey (flameout; careful not to scorch)

1 pkg SafLager S-23 Yeast
Yeast nutrients per dosing and time addition recommendations

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
