- Biscuit Rice Malt 3 12
- Pale Rice Malt 2 lb 4 oz
- Pale Buckwheat Malt 2 lb 4 oz
- Roasted Unmalted Buckwheat 1 lb 10 oz
- Gas Hog Rice Malt 13 oz
- Caramel 240L Millet Malt 13 oz
- Columbus Hops 0.42 oz
- Yeastex 61 Nutrient 2 grams
- Irish Moss 1/4 tsp
- Yeast: Fermentis S-04

Procedure:
PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.
MASH INSTRUCTIONS:
Perform rising step mash - 1st rest 125F @ 15 min; 2nd rest 145F @ 45 min; 3rd rest 175F @ 30 minutes. All enzymes added at start of mash; Ceremix Flex 8.3 ml; Ondea Pro 16.6 ml; Termamyl 12.4 ml.
SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.
BOIL INSTRUCTIONS:
Columbus Hops 0.42 oz @ 90 minutes
Yeastex 61 Nutrient 2 grams @ 10 minutes
Irish Moss 1/4 tsp @ 10 minutes
