- Pale Millet Malt 2 lb 8 oz
- Light Roast Millet Malt 13 oz
- Pale Yellow Maize Malt 1 lb 11 oz
- Flaked Quinoa 1 lb 11 oz
- Pale Buckwheat Malt 1 lb 11 oz
- Saaz Hops 2.34 oz
- Mangrove Jack French Saison

Procedure:
PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.
MASH INSTRUCTIONS:
Perform rising step mash - 1st rest 135F @ 45 min; 2nd rest 180F @ 45 min; rise from Step 1 to Step 2 should take 45 minutes. All enzymes added at start of mash; Ceremix Flex 8.3 ml; Ondea Pro 16.6 ml; Termamyl 12.4 ml.
SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.
BOIL INSTRUCTIONS:
Spalt Hops 1.17 oz 90 min
Yeastex 61 Nutrient 2 grams 10 min
Irish Moss 1/4 tsp 10 min
Saaz Hops 1.17 oz 5 min
