Description:

It is a rarity when a brewery shares their coveted recipes. So we were thrilled when Bierly Brewing shared their Irish Red Ale recipe! Red Ales are easy-drinking beers with a pleasant malt character full of caramel and toasted notes.

Ingredients:

  • 3.87 LBS Sorghum Syrup
  • 1 LB 7 OZ Biscuit Rice Malt
  • 4.7 OZ Chocolate Millet Malt
  • 4.7 OZ James' Brown Rice Malt
  • 2.5 OZ Gas Hog Rice Malt
  • 12.2 OZ D-45 Belgian-Style Candi Syrup
  • 9.4 OZ Beet Sugar
  • 1 OZ Fuggle Hops
  • 1 OZ East Kent Golding Hops
  • 4 OZ Maltodextrin
  • Windsor Ale Yeast

Additional Instructions

Primary Ferment: 7 - 10 days
Secondary Ferment: 7 - 10 days

Procedure:

Rising Step mash with Termamyl, Ondea Pro, Ceremix Flex

Dissolve sorghum syrup, beet sugar and candi syrup in runnings as you transfer them to the boil kettle, allow to achieve hot break, and maintain rolling boil.

1.0 OZ Fuggle Hops @ 60 min
0.5 OZ East Kent Goldings Hops @ 30 min
0.5 OZ East Kent Goldings Hops @ 15 min
4.0 OZ Maltodextrin @ 15 minutes
Yeast nutrient and Irish moss @ 15 minutes

Windsor ale yeast recommended
