Belgian Witless is a festive, flavor-packed gluten-free Belgian-style witbier that captures the classic character of the style. Built on a sorghum extract base with a touch of flaked maize and candi sugar, this recipe delivers a light, refreshing body while maintaining authentic depth. Bright notes of bitter orange peel and crushed coriander lead the aroma and flavor, complemented by subtle spice from whole peppercorns and a soft hop background. Ingredients:

  • Grain Bill ---------------------------------------
  • 6 oz Flaked Maize
  • Fermentable Bill ---------------------------------------
  • 7 lbs Sorghum Liquid Malt Extract
  • 4 oz Dark Belgian Candi Sugar
  • Hop Bill Summary ---------------------------------------
  • 1 oz Northern Brewer Hops
  • 1 oz Saaz Hops
  • Other Ingredients ---------------------------------------
  • 1 tsp Irish Moss
  • 8 oz Maltodextrin
  • 0.75 oz Crushed Coriander
  • 0.75 oz Bitter Orange Peel
  • 1 tbsp Whole Peppercorn
  • 1 pkg Safbrew WB-06 Yeast

Primary Ferment: 14 days at 68 degrees

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add sorghum syrup and candi sugar (this prevents scorching the syrup), return to boil allow to achieve hot break.

1 oz Northern Brewer Hops (60 min)
1 oz Saaz Hops (15 min)
1 tsp Irish Moss (15 min)
8 oz Maltodextrin (15 min)
0.75 oz Crushed Coriander (5 min)
0.75 oz Bitter Orange Peel (5 min)
1 tbsp Whole Peppercorn (flameout)

1 pkg Safbrew WB-06 Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHS or grocery store.
