This is our first Ceremix Flex and Ondea Pro exclusive recipe kit. This is an advanced recipe kit that requires the brewer to conduct a rising step mash, and whirlpool a hops addition post-boil at 170F for 15 minutes. Malts are a naturally gluten free product malted in a dedicated gluten free facility. Produces gluten free beer. Use enzymes to convert starches into sugars which can then be fermented by brewing yeast.

Ingredients:

  • 10 LBS Biscuit Rice Malt
  • 2 LBS Light Roasted Millet Malt
  • 2 LBS Pale Buckwheat Malt
  • 1 LB Goldfinch Millet Malt
  • 1 LB Caramel Millet Malt
  • 5 OZ Galaxy Hops
  • 5 OZ Citra Hops
  • 4 OZ Mosaic Hops
  • 1 pkg New England Yeast

Primary Ferment: 14 days

Procedure:

PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.

MASH INSTRUCTIONS:
Perform rising step mash (Click 'Resources' > 'Tutorials' > 'All Grain Brewing Tutorial') for 85 - 135 total minutes using 10-20 ml Ceremix-Flex, and 10-20 ml Ondea Pro enzymes

SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.

BOIL INSTRUCTIONS:
1 OZ Galaxy & Citra Hops (10 minutes)
2.5 tsp Yeast Nutrient (10 minutes) optional / recommended
Post-Boil:
1.5 OZ Mosaic, Citra & Galaxy Hops (Whirlpool for 10 minutes at 170F)
Dry Hopping:
Day 3: 1.25 OZ Mosaic, Citra & Galaxy Hops
Day 7: 1.25 OZ Mosaic, Citra & Galaxy Hops
Yeast: LalBrew New England Yeast
