Ingredients:

  • 9 LBS Pale Millet Malt
  • 4 LBS Biscuit Rice Malt
  • 2 LBS Goldfinch Millet Malt
  • 1 LB Roasted CaraMillet Malt
  • 2 OZ Columbus Hops
  • 3 OZ Simcoe Hops
  • 2 OZ Centennial Hops
  • 1 Whirlfloc tablet
  • 1 pkg Mangrove Jacks M42

Additional Instructions

Primary Ferment: 7 - 10 days
Secondary Ferment: 7 - 10 days

Procedure:

Perform a Single Infusion Mash at 163.4 F for 90 to 120 minutes; or Reverse Step Mash at 155-165F for 90 to 120 minutes followed by 140-150F for 90 to 120 minutes with Termamyl SC DS and SEBAmyl L enzymes per dosing recommendations. Recipe contains the appropriate amount of rice hulls to ensure circulation and filtration.

Allow to achieve hot break and maintain rolling boil.

1.25 OZ Columbus Hops (60 minutes)
0.75 OZ Columbus Hops (45 minutes)
1 OZ Simcoe Hops (30 minutes)
1 Whirlfloc tablet (10 minutes)
0.5 OZ Centennial Hops (flameout)
0.5 OZ Simcoe Hops (flameout)

Yeast: Mangrove Jack’s M42 New World Strong Ale Yeast
Yeast nutrients per dosing and time addition recommendations.

Dry hopping:
0.75 OZ Centennial and 0.75 OZ Simcoe Hops (14 days)
0.75 OZ Centennial and 0.75 OZ Simcoe Hops (7 days)
