Description:

Blood Orange Hefe is a vibrant, refreshing gluten-free hefeweizen-style ale that captures the classic soft wheat-beer character using sorghum syrup and corn sugar as clean, gluten-free fermentables. Fresh seasonal blood oranges bring bright citrus aroma, subtle tartness, and a delicate ruby hue, while Hallertau and Tettnang hops provide gentle bitterness that lets the fruit and yeast character shine. Fermented with a gluten-free wheat-style yeast, this beer delivers smooth mouthfeel, light body, and classic hefe notes of soft fruit and spice, resulting in a crisp, aromatic, and highly drinkable gluten-free wheat-style ale perfect for warm weather or anytime you want a fresh citrus-forward brew.

Ingredients:

  • 6 lbs Sorghum Syrup
  • 1 lb Corn Sugar
  • Hop Bill Summary ---------------------------------------
  • 0.5 oz Hallertau Hops
  • 1 oz Tettnang Hops
  • Other Ingredients ---------------------------------------
  • 4 Blood Oranges
  • 1 pkg SafBrew WB-06
  • Yeast Nutrient

Additional Instructions

Primary Ferment: 7 days at 70 degrees
Secondary Ferment: 7 days at 70 degrees

Procedure:

Peel blood oranges and separate sections of fruit. Discard half of the peels. Cut fruit into small pieces. Grate the peel and save the rind only! Heat fruit and peels in 1/2 gallon water to 160 degrees and then turn off heat. Let it steep as it cools. Pour into wort when cooled according to schedule.

Bring to boil. Remove from heat and add sorghum syrup and corn sugar (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
