Description:

This recipe was adapted from multiple Newcastle clone recipes by GFHB before it was brewed to perfection by Anthony G from Texas. Instructions include two brewing options: BIAB or Mash Tun. Anthony G has been a guest GFHB blogger and has shared a lot of his experiences using the BIAB brewing method. It is note worthy the amount of enzymes required when using the BIAB method due to the dilute mash conditions. This is a subject that Anthony G goes into detail about in his blog article 'BIABing with Anthony G from Texas' in April 2018. Anthony G asked his non-gf friends taste each version of this beer along with a Newcastle Brown Ale until they all agreed on this final version.

Ingredients:

  • 9 LBS Pale Millet Malt
  • 3 LBS Biscuit Rice Malt
  • 3 LBS Crystal Rice Malt
  • 8 OZ Munich Millet Malt
  • 4 OZ James Brown Rice Malt
  • 4 OZ Gas Hog Rice Malt
  • 2 OZ Fuggles Hops
  • 1 OZ Saaz Hops
  • Mangrove Jack's M36 Yeast

Primary Ferment: 7 days
Secondary Ferment: 7 days

Procedure:

BIAB Instructions: Perform a Single Step BIAB Mash at starting at 165 F. Stir every 30 minutes. Insulate kettle but do not be concerned about temperature unless it drops below 131 F. Use 2oz each of the SEBAmyl BAL 100 Endo-Alpha and SEBAmyl L Endo-Alpha. Perform Iodine test after 90 minutes. If conversion not complete, check every 15 minutes there after.

Mash Tun Instructions: Perform a Single Infusion Mash at 163.4 F for 90 to 120 minutes; or Step Mash at 155-165F for 90 to 120 minutes followed by 140-150F for 90 to 120 minutes with SEBAmyl BAL 100 or Termamyl, and SEBAmyl L enzymes. Use the appropriate amount of rice hulls to ensure circulation and filtration.

Allow to achieve hot break and maintain rolling boil.

1 OZ Saaz Hops @ 15 min
Irish Moss & Yeast Nutrients @ 15 min
