Description:
Nice bodied millet beer with lightly malty profile and slight hop presence.
Ingredients:
- 5 lb pale millet malt
- 2 lb Munich millet malt
- 1 lb crystal 10 millet malt
- 1.75 lb oat hulls
- 2 g alpha amylase enzyme
- 0.5 oz Wakatu hops (60 min)
- 0.38 oz Wakatu hops (20 min)
- 0.33 oz Wakatu hops (6 min)
- Pitch Irish moss (20 min)
- 1/8 tsp yeast nutrient (20 min)
- 1 packet K-97 German al yeast
- 4 oz corn sugar to prime

Procedure:
Mash at 163 F for 110 minutes with 1.25 quarts water per pound of grain and fly sparge to collect 3.75 gallons of wort in the kettle. Boil for 60 minutes. Chill as quickly as you can, and pitch yeast at 65 F. Bottle after 3 weeks.
