This is the partial-mash version of the all-grain gluten-free Fantastic Floyds IPA, designed for brewers looking for a simpler process without sacrificing hop character. Amarillo and Citra hops deliver bright tropical citrus aromatics balanced by firm bitterness, while a millet and buckwheat mash adds subtle depth beneath the fermentables. A bold, hop-forward gluten-free IPA with a clean, dry finish.

- 6.6 lb Sorghum syrup
- 1 lb Rice extract
- 1.5 lb Raw sugar

- 2 oz Citra hops
- 2 oz Amarillo hops

- 1 Whirlfloc tablet
- 1 pkg LalBrew Nottingham yeast

Procedure:
Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.
Remove from heat and add sorghum syrup, rice extract and raw sugar (this prevents scorching the syrup), return to boil allow to achieve hot break.

0.75 oz Amarillo hops 15 min
1 Whirlfloc tablet 10 min
0.75 oz Amarillo hops Ko WP 10 min
0.25 oz Citra hops ko WP 10 min
1 pkg LalBrew Nottingham yeast
Dry hopping:
0.50 oz Amarillo hops (10-14 days)
1 oz Citra hops (10-14 days)
Two week primary fermentation; rack to secondary and add dry-hop additions; allow 10-14 days in secondary. Bottle with 5 oz priming sugar and condition for 20 days; or keg and force carb to 2.6.
