A gluten-free Belgian-style Witbier bursting with bright, fresh citrus aromas from clementines and Cara Cara oranges. Ingredients:

  • Grain Bill ---------------------------------------
  • 6 oz Pale Oat Malt (GF)
  • Fermentable Bill ---------------------------------------
  • 3 lbs BriesSweet Sorghum Syrup
  • 0.5 lb Honey
  • Hop Bill Summary ---------------------------------------
  • 0.25 oz Hallertauer hops 3.8% AAU
  • 0.5 oz Tettnang hops 4.7% AAU
  • Other Ingredients ---------------------------------------
  • 6 Clementine oranges, flesh only
  • 2 Cara Cara oranges, zest only
  • 7 g Coriander, cracked
  • 1 g Black pepper, cracked
  • 1/2 pkg LalBrew Wit yeast

Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break.

Separately, steep orange flesh and zest in 1 quart of 160 degree water near beginning of boil. Add honey after 20 minutes of steeping. Add this to the wort at the end of the boil.

0.25 oz Hallertauer hops (60 min)
0.25 oz Tettnang hops (20 min)
0.25 oz Tettnang hops (10 min)
7 g Coriander, cracked (5 min)
1 g Black pepper, cracked (5 min)
1 quart mixture of orange flesh/zest and honey (0 min)

Yeast:
1/2 pkg SafBrew Wheat (WB-06)
