Dual Spires Black Lodge Ale is a rich, dark gluten-free black ale recipe crafted using sorghum syrup, brown rice syrup, candi sugar, and blackstrap molasses. Developed before gluten-free malts were widely available, this recipe highlights accessible ingredients while delivering deep caramel, roasted, and molasses notes—making it an excellent choice for homebrewers looking to create bold, flavorful gluten-free beer without specialized grains.

Ingredients:

  • 3 lbs Sorghum Syrup
  • 3 lbs Brown Rice Syrup
  • 1 lb D-180 Candi Syrup
  • 8 oz Blackstrap Molasses
  • 8 oz Maltodextrin
  • 1 oz Cascade Hops
  • 1 oz Northern Brewer Hops
  • 1 tsp Irish Moss
  • 1 pkg SafAle US-05 yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum, brown rice and cindi syrup, and blackstrap molasses (this prevents scorching the syrup), return to boil allow to achieve hot break.

8 oz Maltodextrin @ 60 min
0.5 oz Cascade hops @ 45 min
0.5 oz Northern Brewer hops @ 45 min
0.25 oz Cascade hops @ 25 min
0.25 oz Northern Brewer hops @ 25 min
1 tsp Irish Moss @ 15 min
0.25 oz Cascade hops @ 5 min
0.25 oz Northern Brewer hops @ 5 min

1 pkg SafAle US-05 yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHS or grocery store.
