Description:

Light Honey Ale is a refreshing gluten-free pale ale brewed with sorghum and rice extracts, enhanced with honey for a soft, sweet finish. Saaz hops add gentle floral and spicy notes, while maltodextrin rounds out the body for smooth drinkability. Fermented with Safale US-05 yeast, this ale offers a crisp, easy-drinking flavor entirely free of gluten.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 6 lbs Sorghum Extract
  • 1 lb Dried Rice Extract
  • 2 lbs Honey
  • Hop Bill Summary ---------------------------------------
  • 1.5 oz Saaz Hops
  • Other Ingredients ---------------------------------------
  • 4 oz Maltodextrin
  • 1 pkg Safale US-05 Yeast

Additional Instructions

Primary Ferment: 21 days at 68 - 70 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum and rice extracts (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Saaz Hops (60 min)
4 oz Maltodextrin (10 min)
0.5 oz Saaz Hops (5 min)
2 lbs Honey (flameout; careful not to scorch)

1 pkg Safale US-05 Dry Yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
