Description:
Brown ale made from buckwheat and millet; and maple and molasses. Nice earthy and sweet tones.
Ingredients:
- 1 lb Buckwheat Malt, roasted (steep for 30 min prior to boil)
- 1 lb Millet Malt, roasted (steep for 30 min prior to boil)
- 8 oz Maple Syrup (60 min)
- 8 oz Blackstrap Molasses (60 min)
- 4 oz Dark Candi Sugar (60 min)
- 1 oz Fuggles Hops (60 min)
- 6 lbs Sorghum Syrup (15 min)
- 0.75 oz East Kent Goldings Hops (15 min)
- 1 tsp Irish Moss (10 min)
- 1 pkg SafAle English Ale (S-04)

Primary Ferment: 7 days at 70 degreesSecondary Ferment: 7 days at 70 degrees

Procedure:
Roast grain to 40 SRM. After wafting in paper bag for a week, steep for thirty minutes prior to adding primary fermentables.
Bring wort to boil, and primary fermentable sugars, return to boil and achieve hot break.
Add hops, finings, remaining fermentable sugars and other ingredients according to schedule.
Achieve hot break after adding secondary fermentables.
Chill wort until appropriate temperature to pitch yeast.
