American IPA is a bold, hop-forward gluten-free craft beer that showcases how great IPA flavor and balance. Built on a base of pale buckwheat, biscuit rice, and corn malts alongside sorghum syrup, candi sugar, molasses, and honey, this recipe creates a clean, fermentable wort with layered depth and subtle sweetness. Cluster, Cascade, and Fuggles hops provide a classic American IPA profile with firm bitterness, bright citrus, and herbal complexity, while dry hopping with Cascade enhances aroma and freshness. The result is a well-rounded, flavorful gluten-free IPA that consistently impresses both gluten-free and traditional beer drinkers alike.

Ingredients:

  • Grain Bill ---------------------------------------
  • 8 oz Pale Buckwheat Malt
  • 8 oz Biscuit Rice Malt
  • 8 oz Corn Malt or Flaked Corn
  • Fermentable Bill ---------------------------------------
  • 6 lbs 10 oz White Sorghum Syrup
  • 8 oz Molasses
  • 6 oz Belgian Dark Candi Sugar
  • 9 oz Honey
  • Hop Bill Summary ---------------------------------------
  • 2 oz Cluster Hops
  • 2 oz Cascade Hops
  • 1 oz Fuggles Hops
  • Other Ingredients ---------------------------------------
  • 1 tsp Irish Moss
  • 1 pkg US-05 Yeast

Additional Instructions

Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add sorghum syrup, molasses and candi sugar (this prevents scorching the syrup), return to boil allow to achieve hot break.

2 oz Cluster Hops (60 min)
0.5 oz Cascade Hops (15 min)
0.5 oz Fuggles Hops (15 min)
1 tsp Irish Moss (15 min)
0.5 oz Cascade Hops (1 min)
0.5 oz Fuggles Hops (1 min)
9 oz Honey (flameout; careful not to scorch)

1 pkg US-05 Yeast
Yeast nutrients per dosing and time addition recommendations

Dry Hopping:
1 oz Cascade Hops

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
