Inspired by the well-known Rendezvous Double IPA—commercially brewed by Bierly Brewing—this recipe showcases how alternative fermentables can produce a complex and satisfying beer. Amarillo, Citra, and Mosaic hops contribute bright citrus, tropical fruit, and juicy aromatics, creating a modern IPA profile with a pleasant mouthfeel and crisp finish. For an even bigger expression, add another 3.3 lb container of sorghum syrup to push the recipe into Imperial IPA territory at 8.86% ABV.

Procedure:
Follow the extract brewing procedures outlined in our brewing tutorials. Add 2 lbs Rogue River Honey during the final 5 minutes of the boil to pasteurize. Remove the kettle from the heat source while adding the honey and return to heat after stirring to help prevent scorching.
