Description:

This gluten-free Extra Special Bitter (ESB) adapted from newspaper interview with Deschutes Brewery that delivers classic English pub character using a simple, barley-free fermentable base of sorghum extract and honey. Traditional Goldings hops provide layered herbal, floral, and earthy notes, with firm but balanced bitterness that complements the subtle sweetness from late honey additions. The result is a smooth, medium-bodied ale with a clean malt profile, gentle complexity, and an authentic British feel — a great example of how gluten-free brewing can faithfully recreate traditional styles without sacrificing flavor, balance, or drinkability.

Ingredients:

  • 7 lbs Sorghum Liquid Extract
  • 4 oz Goldings Hops
  • 0.5 lbs Honey
  • 1 pkg Lallemand London ESB Yeast

Additional Instructions

Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Goldings Hops (60 min)
1 oz Goldings Hops (30 min)
2 oz Goldings Hops (10 min)
0.5 lbs Honey (flameout)

1 pkg Lallemand London ESB yeast

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
