Sierra Nevada Twist is a bright, hop-forward gluten-free extract pale ale inspired by the classic Sierra Nevada flavor profile, built around sorghum syrup and demerara sugar to deliver clean fermentation, crisp body, and balanced malt character without the use of barley. Magnum and Perle hops provide a firm, smooth bitterness, while layered additions of Cascade and Citra create a vibrant citrus and floral aroma that defines the style. Maltodextrin adds body and head retention, helping mimic the mouthfeel of traditional pale ales, while US-05 yeast ensures a clean, neutral fermentation that lets the hops shine. This recipe is an excellent choice for gluten-free brewers seeking a classic American pale ale experience with bold hop expression and a refreshing, well-balanced finish.

  • 6.2 lbs Sorghum Syrup
  • 13.25 oz Demerara Sugar

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup and demerara sugar (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

0.3 oz Citra Hops (15 min)
1 oz Cascade Hops (10 min)

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHS or grocery store.
