Description:

Lancaster Light Ale is a gluten-free American pale ale crafted from sorghum syrup and cane sugar, finished with orange blossom honey for a delicate sweetness. Perle and Centennial hops provide a balanced floral and citrus aroma, while maltodextrin adds smoothness and body. Fermented with Windsor or Nottingham yeast, this ale is crisp, refreshing, and entirely gluten-free.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 7 lbs Sorghum Syrup
  • 2 lbs Cane Sugar
  • 1 lb Orange Blossom Honey
  • Hop Bill Summary ---------------------------------------
  • 1 oz Perle Hops
  • 1 oz Centennial Hops
  • Other Ingredients ---------------------------------------
  • 6 oz Maltodextrin
  • 1 pkg Windsor or Nottingham Ale Yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup and cane sugar (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Perle Hops (60 min)
0.5 oz Centennial Hops (20 min)
6 oz Maltodextrin (15 min)
0.5 oz Centennial Hops (5 min)
1 lb Orange Blossom Honey (flameout; careful not to scorch)

1 pkg Windsor or Nottingham Ale Yeast
Yeast nutrients per dosing and time addition recommendations

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
