Procedure:
Recommended Mashing Regime: Rising Step Mash utilizing Ceremix® Flex per dosing recommendations.
Dough In - 132F (target 125F) pitch 20 ml Ceremix® Flex - 5 minutes
First Hold - 125F - 20 minutes
Rise - 125F to 175F over 60 minutes
Second Hold - 175F 45 minutes
