Ingredients:
- 10 lb Pale Millet Malt
- 4 lb Cara Millet Malt
- 2 lb Caramel Buckwheat Malt
- 2 lb Munich Milet Malt
- 1 oz Magnum hops
- 3 oz Galaxy hops
- 4 oz Citra hops
- 3 oz Strata hops
- 1 Whirlfloc tablet
- 2 pkt Windsor Ale Yeast

Procedure:
Mash Note: This is a no sparge mash regime.
Mash In - 135F
First Hold - 135F - 30 minutes
First Rise - 155F
Second Hold - 155F - 30 minutes
Second Rise - 185F
Third Hold - 185F - 30 minutes
Boil Schedule:
1 oz Magnum hops (60 minutes)
1 Whirlfloc tablet (10 minutes)
2 oz Citra hops (0 minutes)
1 oz Galaxy hops and 1 oz Strata hops (whirlpool at 180F for 20 minutes)
1 oz Citra hops, and 1 oz Galaxy hops and 1 oz Strata hops (knockout)
Yeast: 2 pkg Windsor Ale Yeast
Yeast nutrients per dosing and time addition recommendations.
Dry Hopping:
1 oz Citra hops, and 1 oz Galaxy hops and 1 oz Strata hops (at 55F or below)
Optional / Recommended: purge fermenter with CO2 for dry hop addition
