Description:

Autumn in a glass. A rich, toasty lager featuring gluten-free Munich and Vienna malts for a deep bready flavor and a clean, crisp finish. Our gluten-free Marzen is a deep copper lager that pays homage to the original Bavarian wedding feast. Brewed in the spring and lagered for months, it’s a smooth, substantial gluten-free beer designed to be enjoyed by the liter.

Ingredients:

  • 6 LBS Vienna Millet Malt
  • 5 LBS Biscuit Rice Malt
  • 4 LBS Munich Millet Malt
  • 2 LBS Pale Buckwheat Malt
  • 1 OZ Mt. Hood Hops
  • 1 OZ Hallertau Hops
  • 1 Whirlfloc Tablet

Procedure:

● Enzyme Note: Ceremix® Flex and Ondea Pro can replace the listed enzymes; in a rising step mash they increase mash efficiency and may alter target beer parameters ●

PREPARATION:
Clean and sanitize your work area and equipment using a cleaner and sanitizer specifically for brewing.

MASH INSTRUCTIONS:
Perform single infusion or reverse step mash for 90-120 minutes
6 LBS Vienna Millet Malt
5 LBS Biscuit Rice Malt
4 LBS Munich Millet Malt
2 LBS Pale Buckwheat Malt
Termamyl and SEBAmyl L enzymes per dosing instructions

SPARGE INSTRUCTIONS:
“Fly sparge” by gently sprinkling water from the hot liquid tank while matching flow rates of the mash tun and hot liquor tank.

BOIL INSTRUCTIONS:
1 OZ Mt. Hood Hops (60 minutes)
1 OZ Hallertau Hops (15 minutes)
1 Whirlfloc tablet (10 minutes)

Yeast nutrients per dosing and time addition recommendations.
