Description:
Light American pale ale style beer with some subtle spicy undertones
Ingredients:
- 1 lbs Flaked Maize (steep at 160 degrees for 10 min)
- 0.5 lb Whole Sorghum (steep at 160 degrees for 10 min)
- 0.5 lb Gluten Free Oats - optional (steep at 160 degrees for 10 min)
- 1 oz Northern Brewer Hops (60 min)
- 1 oz Cascade Hops (15 min)
- 0.25 tsp Irish Moss (10 min)
- 0.5 lb Malto-dextrin mix with cold water first (5 min)
- 0.75 oz coriander seeds (5 min)
- 0.75 oz bitter orange (5 min)
- 15 black peppercorns (5 min)
- 1 pkg Ale Yeast

Procedure:
Toast Whole Sorghum & Gluten Free Oats in the oven for 20 minutes at 375 F.
Steep grains for ten minutes prior to boil.
Bring wort to boil, and primary fermentable sugars, return to boil and achieve hot break.
Add hops, finings and other ingredients according to schedule.
Chill wort until appropriate temperature to pitch yeast.
