2 Hearted Ale Homage is a vibrant, hop-forward gluten-free pale ale that captures the floral and citrus character of a classic American IPA. Built on a base of sorghum syrup and table sugar, with maltodextrin for body, this beer delivers smooth mouthfeel and clean fermentation. Centennial hops provide bright citrus and floral aromas, while Nottingham yeast ensures a well-attenuated, crisp finish. Perfect for gluten-free beer enthusiasts seeking a bold, aromatic ale reminiscent of a traditional West Coast IPA.

Ingredients:

  • Fermentable Bill ---------------------------------------
  • 9 lbs Sorghum Syrup
  • 0.5 lb Table Sugar
  • Hop Bill Summary ---------------------------------------
  • 5 oz Centennial Hops
  • Other Ingredients ---------------------------------------
  • 8 oz Maltodextrin
  • 1 pkg Nottingham Yeast

Additional Instructions

Primary Ferment: 14 days at 68 degrees
Secondary Ferment: 10 days at 68 degrees

Procedure:

Bring to boil. Remove from heat and add sorghum syrup and corn sugar (this prevents scorching the syrup), return to boil allow to achieve hot break. Add hops and other ingredients according to schedule.

1 oz Centennial Hops (60 min)
1 oz Centennial Hops (20 min)
1 oz Centennial Hops (7 min)
0.5 lb Table Sugar (5 min)
8 oz Maltodextrin (5 min)
1 oz Centennial Hops (2 min)

1 pkg Nottingham yeast

Dry Hopping:
1 oz Centennial Hops

Recipe Note: This recipe was most likely developed between 2010-2014 before buckwheat, millet and rice malt was widely available. Therefore, it utilizes many gluten-free ingredients readily found at a LHBS or grocery store.
