Description:

This all-grain American Lager is designed specifically for gluten-free homebrewing, using a clean base of rice malts for a crisp, classic profile. Pale rice malt provides a light, smooth body, while biscuit and crystal rice malts add subtle grain depth and balance. Traditional noble hops lend gentle bitterness and aroma, and a clean lager yeast keeps the finish dry and refreshing. A straightforward celiac-safe gluten-free lager.

Ingredients:

  • 11 lb Pale rice malt
  • 2 lb Biscuit rice malt
  • 0.5 lb Crystal rice malt
  • 1 oz Spalt Select hops
  • 0.75 oz Hallertau hops
  • 0.5 oz Czech Saaz hops
  • Dry Lager yeast

Additional Instructions

Primary Ferment: 7 days at 68 degrees
Secondary Ferment: 7 days at 68 degrees

Procedure:

● Enzyme Note: Ceremix® Flex and Ondea Pro can replace the listed enzymes; in a rising step mash they increase mash efficiency and may alter target beer parameters ●

Perform a Single Infusion Mash at 163.4F for 60-90 minutes; or Step Mash at 155-165F for 45-60 minutes followed by 140-150F for 45-60 minutes with Termamyl SC DS and SEBAmyl L enzymes per dosing instructions and in order of optimal temperature recommendations.

Bring to boil and allow to achieve hot break. Maintain rolling boil.

0.5 oz Spalt Select hops @ 60 min
0.25 oz Hallertau hops @ 30 min
0.5 oz Czech Saaz hops @ 15 min

Yeast: Dry Lager (S-23 or hybrid yeast for fermenting at ale temperature)

Secondary dry hopping:
0.5 oz Spalt Select hops
0.5 oz Hallertau hops
