Tropical citrus flavors from the hops, wonderful millet malts provide the sweet malty taste without the sorghum syrup twang.
Ingredients:
- 9 lb Pale millet malt (Grouse)
- 3 lb light roast millet malt (Grouse)
- 2 lb Crystal malt (Grouse)
- 2 lb roasted buckwheat malt
- 1.6 lb rice hulls (lauter & sparge)
- 1/2 tsp gypsum (mash)
- 1/8 tsp sodium metabisulphite (mash)
- 1/2 tsp calcium chloride (mash)
- 1/2 tsp calcium carbonate (mash)
- 1 Tbsp 5.2 stabilizer (mash)
- 1 Tbsp amylase enzyme
- .75 oz Citra (60 min)
- .75 oz Amarillo (10 min)
- 4 oz malto dextrin (10 min)
- 1 tab whirlfloc (10 min)
- .75 oz Amarillo (KO WP 10 min)
- .25 oz Citra (KO WP 10 min)
- 1 oz Citra (dry-hopped secondary)
- .50 oz Amarillo (dry-hopped secondary)
- 2 pkg Safale-05

Procedure:
Pre-treat 10-12 gallons of water the night before and drop ph to at least 5.8. Mash in with 6 gallons water ph 5.4-5.8 at 145-155 for 120 mins mash out and sparge at 170 and run 7.5 gallons to kettle. Boil 90 minutes follow hop and fining additions above. Primary fermentation 68 degrees 14 days ,rack to secondary and add hops to top of wort 60 degrees 14 days if kegging cold crash for last 2 days. If bottling use 5 oz priming sugar and bottle condition another 14-20 days.
