Description:

A light, gluten-free session ale built for maximum drinkability at low ABV. Bright Cascade hops deliver classic grapefruit and citrus zest, with Centennial adding a touch of floral depth and clean bitterness. Roasted buckwheat provides subtle nutty malt character to support the hops without heaviness, while sorghum extract keeps the body light and crisp. Refreshing, flavorful, and easy to enjoy pint after pint.

Ingredients:

  • 2 lb Roasted buckwheat malt
  • Fermentable Bill ---------------------------------------
  • 3 lb Sorghum extract
  • 1 lb Raw sugar
  • Hop Bill Summary ---------------------------------------
  • 3 oz Cascade hops
  • 1 oz Centennial hops
  • Other Ingredients ---------------------------------------
  • 1 tbsp Irish moss (boil)
  • 1 pkg Safale US-05

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add sorghum syrup and raw sugar (this prevents scorching the syrup), return to boil allow to achieve hot break.

1 oz Cascade hops (45 min)
0.5 oz Cascade hops (15 min)
1 tbsp Irish moss (10 min)
0.5 oz Cascade hops (5min)
1 oz Centennial hops (ko)

1 pkg Safale US-05

Dry hopping:
1 oz Cascade hops (14 days)

Primary fermentation at 64F for 14 days; rack to secondary and dry-hop 1 oz cascade for additional 14 days.
