Description:

A gluten-free pale ale brewed with pale buckwheat, millet and oat malt, and flaked quinoa. The combination of these malts with brown rice extract, sorghum syrup, honey, and brown sugar creates a rich, slightly sweet malt backbone, while the carefully selected hops provide bright citrus and earthy notes. Soft body, moderate bitterness, and a crisp finish make this an ideal beer for homebrewers seeking a flavorful gluten-free ale.

Ingredients:

  • Grain Bill ---------------------------------------
  • 8 oz Pale Buckwheat Malt
  • 8 oz Pale Millet Malt
  • 8 oz Pale Oat Malt
  • 8 oz Flaked Quinoa
  • Fermentable Bill ---------------------------------------
  • 1 lb 5oz Brown Rice Extract
  • 2 lbs Sorghum Syrup Extract
  • 4 oz Honey
  • 4 oz Brown Sugar
  • Hop Bill Summary ---------------------------------------
  • 0.30 oz Galena hops (12.5% AAU)
  • 0.25 oz Willamette hops (5.5% AAU)
  • 0.5 oz Cascade hops (5.5% AAU)
  • Other Ingredients ---------------------------------------
  • 1 tsp Irish Moss
  • 3 oz Maltodextrin
  • 1 pkg Safale S-04 yeast

Primary Ferment: 7 days at 68 degrees

Procedure:

Steep milled malt along with amylase enzyme in 2 gallons of water at 163.4F for 30 - 45 minutes. Use the appropriate amount of rice hulls to ensure circulation and filtration. Sparge malt with 170F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.

Remove from heat and add brown rice extract, sorghum syrup, honey and brown sugar (this prevents scorching the syrup), return to boil allow to achieve hot break.

0.30 oz Galena hops - 60 minutes
0.25 oz Willamette hops - 30 minutes
0.25 oz Cascade hops - 15 minutes
1 tsp Irish Moss - 10 minutes
3 oz of Maltodextrin - 5 minutes
.25 oz Cascade hops - 0 minutes

1 pkg Safale S-04 yeast
