Description:

As to the name - I have always loved birds and while the American Goldfinch is a beautiful bird, the name of this beer comes from the American Roasted Millet Malt and Goldfinch Millet Malt.

Hops schedule look familiar? It is the same hops schedule as the Fantastic Floyd's IPA. The idea for the recipe was essentially "How could this recipe have been designed differently three to four years ago if we knew as much about gluten free malts then as we do now?"

We liked this version of the recipe well enough that we wanted to share it with you. But we may continue working on this recipe a bit more before we consider replacing the current IPA recipe kit with whatever we come up with. Regardless, please enjoy!

Ingredients:

  • 5 lb Pale millet malt
  • 5 lb Biscuit rice malt
  • 2 lb Goldfinch millet malt
  • 2 lb American roasted millet malt
  • 2 lb Roasted buckwheat malt
  • 2 oz Citra hops
  • 2 oz Amarillo hops
  • 1 Whirlfloc tablet
  • 1 pkg Mangrove Jack's M44

Additional Instructions

Primary Ferment: 7-10 days
Secondary Ferment: 7-10 days

Original Gravity: 1.057
Final Gravity: 1.014
Alcohol by Vol: 5.6%

Procedure:

Perform a Single Infusion Mash at 163.4 F for 90 to 120 minutes; or Step Mash at 155-165F for 90 to 120 minutes followed by 140-150F for 90 to 120 minutes with SEBAmyl BAL 100 or Termamyl, and SEBAmyl L enzymes. Use the appropriate amount of rice hulls to ensure circulation and filtration.

Allow to achieve hot break and maintain rolling boil.

0.75 oz Citra hops (60 minutes)
0.75 oz Amarillo hops (15 minutes)
1 Whirlfloc tablet & yeast nutrient (10 minutes)
0.75 oz Amarillo hops (0 minutes with 10 minute rest)
0.25 oz Citra hops (0 minutes with 10 minute rest)

Yeast: Mangrove Jack’s M44 U.S. West Coast Yeast

Dry hopping:
0.5 oz Amarillo hops (Secondary)
1 oz Citra hops (Secondary)
